Instructor: Mikel Añibarro Ortega, a PhD candidate in Agrofood Science and Technology at the University of Vigo and a researcher at the Mountain Research Center, holds a degree in Chemistry from the University of the Basque Country and a master's degree in Pharmacy and Chemistry of Natural Products from the IPB. His work focuses on the valorization of agricultural byproducts as sources of bioactive compounds for the development of functional foods, promoting sustainability and innovation in the food industry.
